Duration

The training course takes place over 2 days, for a total of 16 hours. Day 1 (Monday): welcome from 8:30 am, course starts at 9:00 am, ends at 6:00 pm. Day 2: from 8:30 am to 5:30 pm. Each day includes a one-hour lunch break (12:30 pm – 1:30 pm).

Epiphany Galettes – Seasonal Special

A French classic revisited with precision and flair. This course immerses you in the world of boutique-style Galettes des Rois, with a range of traditional and modern versions tailored for seasonal sales.

You’ll learn how to:

• Make flaky, well-lifted laminated dough, • Prepare almond and frangipane creams, • Introduce flavour variations (lemon, chocolate, nuts…), • Apply clean finishes and consistent baking, • Ensure optimal shelf life and production efficiency. A must-have seasonal training to offer a refined and creative galette collection.
