Duration

The training course takes place over 3 days, for a total of 24 hours. Day 1 (Monday): welcome from 8:30 am, course starts at 9:00 am, ends at 6:00 pm. Days 2 & 3: from 8:30 am to 5:30 pm. Artistic Sugar Showpiece – EXCLUSIVE

An exceptional immersion in contemporary sugar creation, led by Jonathan Mougel. In this one-of-a-kind course, Jonathan Mougel (MOF) will design and produce an original artistic sugar piece, conceived especially for the Bellouet school.

You’ll discover:

• The chef’s creative process and design philosophy, • Key technical steps: cooking, structure, balance, visual impact, • The use of volumes, contrasts and sugar effects, • The birth of a unique and expressive, pedagogical showpiece. A rare moment to witness the making of a sugar sculpture rooted in transmission, innovation and French artisanal excellence.
